1. Cook the rice:
Add the rinsed rice and 1 1/4 cups of water to a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then simmer covered for 18-20 minutes.
2. Prepare the sushi vinegar:
While the rice cooks, mix 2 tbsp of rice vinegar, 2 tbsp of sugar, and 1 tsp of salt in a bowl. Heat until the sugar dissolves.
3. Season the rice:
Once the rice is done, transfer it to a large bowl. Gently pour in the sushi vinegar mixture and mix it together while the rice is still hot.
4. Cool the rice:
Let the rice cool to room temperature before using it for sushi.
